Whoa there! It's not what you're thinking. I have not committed the cardinal sin of dieting that is Indian takeaway. Not at all. I had what I like to think of as a "Jayne Moment". That's where I am very, very good and make an exceptional diet choice, just like she would do.
On Friday I cooked a curry that totally kicked ass. It was delish and it had 0 syns at all. In fact, hubby said it was the best curry I have ever cooked. Praise indeed as he loves my curries. I made something along the lines of Balti Chicken Saag Aloo, although it was kind of a made-up-as-I-go-along recipe. Free on Green, using 1 HEb choice for the chicken, I had it with basmati rice, 1 poppadom for 1.5 syns (a sharwoods cook at home one, cooked without oil for 40 seconds the microwave), and a quarter of a co-op garlic and coriander naan for 4 syns. I also made raita from total 0% Greek yoghurt mixed with a teaspoon of mint sauce and some peeled finely diced cucumber. I was so impressed with myself I have posted the recipe below so that I might actually be able to make it again!
Balti Chicken Saag Aloo
Serves 4
Green - 0 syns + 1 HEb
(or leave out the chicken for a completely free on green vegetarian dish)
Peel 3 large potatoes and chop into chunks. Boil for five minutes then drop a few handfuls of frozen spinach in with the potatoes and boil for a further five minutes or until the spinach is cooked. Drain and put aside.
Spray the pan with fry light and heat up some chilli flakes, garam massala and ground coriander in the bottom of the pan. Fry off 1 large diced onion, 2 diced green peppers and three chopped garlic cloves until soft. Add some chopped mushrooms and while they soften, sprinkle the diced chicken (4 HEb portions) with salt, pepper and garam massala. Place the diced chicken in the pan with the rest of the ingredients to brown. Once browned add the part boiled potatoes and spinach. Tip 1 can of chopped tomatoes into the pan, and half a can of water. Add more spices (garam massala, ground coriander) and salt and pepper to taste. Stir and leave to simmer until the chicken and potatoes are cooked through ... which is about the same time it takes boil basmati rice! Stir a few tablespoons of fat free fromage frais or yoghurt to serve.
Very yum ... and I was able to put the leftovers in the freezer for a ready meal another day.

PS. I was having such a Jayne moment that I also WALKED over to Morrisons to buy my curry ingredients. I even remembered to take my bags for life with me to keep my carbon footprint in check! Lol.
